Boursin Light - Bacon and Cheese Cupcakes Recipe




We were recently sent some Boursin Garlic & Herb Minis and some Boursin Garlic & Herb Light cheese to review. I was also sent a lot of fantastic recipes ideas which can be made using Boursin cheese. We are quite a fussy family and I couldn't see a recipe which would please everyone so I had a look at recipes online. I came across a recipe for Bacon and Boursin Cheese Cups and decided to try those with a few ingredient changes.

Boursin Light Garlic & Herb cheese which contains a whopping 78% less fat than the original Boursin garlic & herb, so if like me you're trying to eat healthily you can still enjoy the delicious taste of Boursin cheese. Although Boursins Light has 78% less fat it still has 100% flavour! This is such a pleasant surprise for me as more often than not when something has been reduced in fat the flavour if reduced too. Thankfully this was not the case with Boursin Light.

We also received some Boursin Garlic & Herb minis to try. These are the perfect size for spreading on a slice of toast, adding to a salad or adding to a jacket potato. As you would expect Boursin minis taste delicious and are a great addition to the Boursin range.
The great thing about Boursin cheese is it can be used in so many different ways whether for a quick snack or used in a main meal. Here are some recipe suggestions: 
Boursin and Vegetable Spring Rolls, Boursin Panini w/Turkey & Ham, Tomato and Olive Encrusted Lamb. There are many more recipes listed on the Boursin website. We can't wait to try the Sundried Tomato & Basil Cheese Straws!
Bacon and Cheese Cupcakes
You will need:
Puff pastry 1/2 a packet (17.3-ounce size)
Boursin cheese
6 rashers of bacon 
Grated cheese
Milk 

Directions
Preheat the oven to gas mark 6/400°F. Cook the 6 bacon rashers and cut into small pieces. Place the pastry onto a lightly floured surface and roll out into an 18x9 inch rectangle. Cut the pastry into 18 3x3 inch squares. Place each pastry square into a greased cupcake tray pressing down so the centre of the pastry is touching the bottom of the tray. Next put 1 tablespoon of milk into a bowl then add 4/5 heaped tablespoons of Boursin cheese to the bowl and cream together. Spoon a teaspoon full of the creamed cheese into each pastry cupcake then top with bacon and cheese. Place into the center of the oven for around 15 minutes or until golden brown.

Our bacon and cheese cupcakes turned out really well and tasted amazing! Everyone loved them and it is something we will be making again and will be recommending to family and friends. The cupcakes would be a great addition to a party menu or as a starter! 

You could also add other ingredients to your cupcakes, onion, tomatoes, cooked chicken... there are so many different variations you could make they are sure to be a hit time and time again.
